Time for baking

…cookies and muffins. The recipes are quick, easy and so delicious!

I’ve been using the same chocolate chip cookies recipe for years and they always come out moist and chewy. It’s been a long time and I can’t remember the source, so here’s what you’ll need to do:

Ingredients:

(makes about 30 medium size cookies)

250gr of butter softened or in room temperature

1 cup (200gr) sugar

1 cup (170gr) brown sugar (packed)

2 eggs

2 Tbsp of vanilla extract

3 1/4 cups (360gr) all purpose flour

1tsp baking soda

1 tsp salt

125gr dark chocolate chopped into chunks

Chopped walnuts or hazelnuts (optional)

Preheat oven to 190 ℃.

Meanwhile, mix butter, sugars, eggs and vanilla. I usually mix them either by hand or by using a wooden spoon or a spatula. You could beat them in a stand mixer but be careful not to over mix the dough.

Slowly add the rest of the ingredients.

Line your baking pan with parchment paper, form walnut size balls (or bigger if you want) and allow for enough room between the balls because the cookies are going to spread during baking.

Bake for 8 to 10 minutes. Remove from the oven and let them sit for 2-3 minutes. Transfer them to a wire rack ant wait until they cool down.

Enjoy them with a nice cup of coffee!

The second time I’m making them I think I will use less cinnamon and ground cloves because their flavor was overpowering and couldn’t taste the coffee that much.
